Anyone knows how I should configure the "custom insert parameter" for the custom insert event of an editable grid?
I wan to insert a "date" into the db (datetime of submission)
I tried with "expression" and setting the parameter source to "Date('d-m-Y H:i:s')" and defined the Format, but there is nothing inserted in my db for that field (tried various methods).

You mentioned "custom insert event" but you probably mean the Custom Insert dialog/window?
If so, try setting up you Custom Insert Parameter as follows:
Field Type: Date
Field Format: yyyy-mm-dd HH:nn:ss
Parameter Source Name: Date('d-m-Y H:i:s')
Parameter Source Type: Expression
Parameter Source Format: dd-mm-yyyy H:nn:ss
(do not use quotes)

It works now. I don't know why it didn't work before as I tried this already. Must be a typo or something.
