Is there a way to id and hide a complete column in a grid form?

Not currently, at least not in a direct way.

Yes in Editable Grids, using client code (JavaScript).
Both EditableGridAddButton and EditableGridAutoRows examples in CCS Example Pack are based on hiding the grid rows. You can find the JavaScript code in those examples.

As for regular grids, just use the SQL query that doesn't show the rows that you don't need.
