Does CC require that the password stored in a password field of a
database used for a login be in plain text?
If so is there a way to encrypt the password?

This is CC's default behavour to handle passwords this way.
If you want to encypt the password then you can
use md5 algorith in javascript on client side (OnSubmit event in form)
And use same algorithm on server side to compare hashes ,
to do this you will need to redefine "Form properties"/Events/OnLogin event
