Umlauts, special characters difference between 4.3 and 5.1

I have an application form in 4.3 where I put in data. Now I want to list them with a 5.1 application.
Both 4.3 and 5.1 have both all utf-8

But in the list Umlauts and other special characters are shown as � ....

Does anybody knows help?
